Critical Points of Food Safety in the Mill

Gains:

  • Can list the main food safety risks in the mill
  • Can match checkpoints and measures
  • Knows why record keeping is mandatory

Flour is a product that is not consumed without processing, but the safety of the final product (bread, pasta) starts at the mill. Therefore, the mill is the critical link in the food safety chain.

Major risks and controls

  • Foreign matter (metal, stone, glass): magnet, stone separator, sieve; regular check record.
  • Mycotoxin: analysis in incoming wheat, separation of risky batch.
  • Pest: warehouse hygiene, monitoring stations, fumigation records.
  • Allergen/cross contamination: line separation and cleaning verification.
  • Contamination from equipment: food-grade material, oil selection.
  • Dust explosion: aspiration, grounding, ATEX rating.

Why is registration required?

It is not enough to say "we do" in an audit; A record of "when, who, what measured" is required. If there is no registration, the application is also ignored.

Simple and frequent tasks such as cleaning magnets are the most frequently skipped tasks. Embed the checklist in the shift report; a separate form is always forgotten.
