What does hardness change?
In hard wheat, the endosperm has a tight structure; It produces coarse semolina during crushing and puts more load on the reduction passages. Soft wheat turns into flour early, but ash control becomes difficult due to the brittleness of the bran.
Practical result: purifier is more critical in hard wheat, sieve selection and roller setting are more critical in soft wheat. It is unrealistic to expect the same quality when two different wheat arrives at the same facility without changing the settings.
Protein and gluten
Protein ratio and gluten quality determine whether the flour will be used for bread, biscuits or pasta. The mill does not create these values; It preserves or spoils the value coming from wheat. Overheated rollers damage the gluten.
humidity
The humidity of the incoming wheat determines the tempering recipe. If the standard recipe is applied to dry wheat, the endosperm will not soften sufficiently; When wheat arrives wet, the sieves become clogged.
What does artificial intelligence do here
If the wheat analyzes of past projects, the recipes applied and the yields obtained are kept in the institutional memory, the question "what did we do with similar wheat and what results did we get" for a new region can be answered in seconds. This is not a guess but an inference from your own history.
When asking regional questions to artificial intelligence, give wheat data together: protein, hardness, moisture, hectolitre. If these four numbers are not present, the answer will be general and will not be of any use to you.
